  • Birriadilla: Tender and juicy beef meat cooked in a broth with chopped onions and cilantro, inside a flour tortilla with melted cheese, served with a side of consomé for dipping.
  • Chiles Toreados: A way to spice things up.
  • Flan: A classic dessert, sweet and creamy custard known for its smooth, velvety texture and caramelized sugar topping.
  • Queso Fundido: House-made chorizo, melted cheese and pico de gallo with chips or tortillas.
  • Chilaquiles: Fried corn tortilla strips sautéed with red or green salsa, topped with fried eggs, sour cream, queso fresco, onions and avocado slices. Served with a side of beans.
  • Burrito Jalisco: Rice, refried beans, chicken and chorizo, topped with cheese dip, sour cream and pico de gallo.
  • Shrimp Taco: Chipotle mayo shredded cabbage, seasoned grilled shrimp, avocado.
  • ChoriPollo: Grilled chicken topped with house made chorizo, cheese dip and grilled pineapple, served with rice, refried pinto beans and your choice of tortillas.

At Ajolote Mexican Grill, our story is one of passion, resilience, and deep cultural roots.

 

After years of working throughout the restaurant industry, we set out to create something of our own, bringing together the flavors, techniques, and traditions learned along the way. Inspired by the rich culinary heritage of Mexico City, Jalisco, and Guerrero, our menu reflects a journey shaped by family recipes, street food traditions, and hands-on experience.

As a family-owned restaurant, everything we serve is crafted with intention. From tacos and tamales to chiles rellenos and aguas frescas, each dish represents the diversity and soul of Mexican cuisine. Our meats are marinated in-house and we proudly make our own chorizo, delivering bold, authentic flavor you won’t find just anywhere. We believe in keeping things simple and fresh, using quality ingredients without unnecessary preservatives.

The ajolote (axolotl), a symbol honored in Mexica culture, represents endurance, transformation, and spiritual connection. Its ability to regenerate speaks to renewal and inner strength, inviting us all to embrace growth and connection in our own journey.

Our goal is simple: to create a space where everyone feels welcome, where every meal is made with care, and where you can truly taste the difference.
